Leche de tigre, or “tiger’s milk” is a citrus-based marinade made with fresh lime juice, salt, cilantro, grated ginger, and a variety of spicy peppers. Traditionally used in Peru to cure fish in ceviche, Peru’s national dish, our tart take on Leche de Tigre may forgo the fish, but certainly not the flavor.
